Default Apps hijacked by Android Apps

I guess there has to be a downside to all the Android freedom we’re enjoying with the new 10.2 OS. I have noticed that Android apps now have the ability to establish themselves as the default apps for various functions. I’ve noticed it on a bunch of things but most significantly, after installing the Skype APK, any time I tap on a phone number – in an email or webpage – instead of trying to dial using the phone it tries to fire up Skype. That is bad news. Anyone have any suggestions to reverse that, short of uninstalling Skype?
